I don’t care WHAT time of year it is, New Year or the middle of summer, you need healthy dinner ideas that are gonna make you feel amazing!

But you also need healthy dinner recipes that aren’t going to be disappointing. Honestly, I hate having healthy dinner recipes that make you go, “Ok, well let’s just get this over and done with.” You deserve to have something tasty and filling, but also makes you feel good inside and out!

SUPER Easy Tuna & Avocado Tacos

This one is a personal recipe I made this last week! And it’s super easy (as the name suggests 😉).

All you need is…

  • 4 Corn tortillas (or more!)
  • 2 Pre-packaged diced tuna (meant for eating raw which you can find at some stores – can cook it as well)
  • 2 Diced avocadoes (or more)
  • Queso fresco, crumbled on top (which just translates out to “fresh cheese” and should be something you can find at stores as well!)

The only thing that really needs heating is the corn tortillas which you can either do in the microwave or on a pan with olive oil + any spices you want (if desired).

It tastes SO good, but also makes you feel incredible. My husband kept on thanking me for it and will probably have it again this week. Definitely a good healthy dinner recipe!
